Keemun black tea production developed during the late 19th century, considerably later than many of China’s older green-tea traditions. What Does “Congou” Mean?
Keemun belongs to the family of black teas historically described as Congou teas. The term is associated with the idea of gongfu—skill and disciplined effort—and reflects the craftsmanship involved in producing fine black tea leaves.
Rather than cutting the leaves into small particles for maximum extraction, as happens with CTC teas, traditional Keemun is carefully worked into fine, taut strips. That difference in processing helps explain the character of the finished cup. A CTC breakfast tea emphasizes fast extraction, strength, and astringency. Keemun emphasizes body, aroma, and complexity while retaining the integrity of the leaf. Both can make excellent breakfast teas—but they provide very different experiences.
