Brewing Instructions (Gong Fu Style):
Add approximately 2 teaspoons (about 5–7 grams) of tea to the teapot. Brew for 10–30 seconds for the first infusion, adjusting time based on the tea type and personal taste. In Gong Fu brewing, a higher leaf-to-water ratio is used, which allows for shorter steeps and multiple infusions.
Each infusion is meant to fill the small tasting cups, and the same leaves are re-brewed many times. With each round, the tea will gradually reveal new layers of aroma, texture, and flavor.
Traditionally, the brewed tea is poured from the teapot into a fairness pitcher (cha hai, sold separately) before serving. This ensures an even strength and consistent flavor for all guests.
